Q & A with Nicole Rubin 

  1. How did you become interested in the field of dietetics? Why do you want to be a dietitian?
    I became interested in learning about nutrition and fitness after making some of my own dietary changes after college to feel better since I was having some minor health issues that I thought could be alleviated through lifestyle changes. I want to learn more about nutrition and dietetics so I can help others feel their best through dietary changes as well.
  2. What do you want to learn at The Sylvia Center?
    I want to learn how to effectively communicate nutrition education materials to the students that I am working with during this rotation. I want my middle school students to be eager to learn new things about food and be more open-minded about trying new ingredients that they’re unfamiliar with!
  3. What does food mean to you?
    When I think of food I immediately think of the social aspect of eating- going out with friends or cooking with family. Food is such a natural and easy way to connect with people.
  4. What message do you want to tell young people about healthy eating?
    That healthy eating doesn’t mean just eating lettuce and spinach. There are so many healthy foods and recipes that are substantial! And that eating healthy doesn’t mean you can never eat any foods that are “unhealthy.”
  5. What is your favorite recipe to make?
    My all-time favorite food is pasta, and my favorite recipe to make is baked ziti. I know it’s not the healthiest but I don’t make it too often. 🙂
