Make the most of cucumber season with this salad. It’s the simplest combination of refreshing cool cukes and salty feta mixed with herbs and a straightforward dressing. It’s perfect as a picnic side or wrapped up in a pita for lunch. To remove the seeds from the cucumbers, take a spoon and carve them out, just like removing seeds from a pumpkin. If your cucumbers are tiny and don’t have many seeds, you can skip this step.
Mediterranean Cucumber Salad
Serves 8 as a side
Ingredients for Salad
4 cups cucumbers, seeds removed and sliced
¼ cup red onion, thinly sliced
¼ cup fresh herbs such as mint, dill, cilantro, parsley
½ cup feta cheese, crumbled
Ingredients for Dressing
¼ cup olive oil
2 Tbs red wine vinegar
1 tsp Dijon mustard
Salt
Pepper
Preparation
1. Combine cucumbers, red onion, herbs and feta in a large bowl.
2. Combine vinegar and mustard in a small bowl. Drizzle in olive oil, whisking to emulsify. Add salt and pepper to taste.
3. Pour dressing over vegetables and toss gently to coat.
